Cheesiest Grilled Cheese
The grilled cheese has been revamped a zillion different ways.  Sometimes they call it a grilled cheese with bacon & onions, grilled cheese with ham or grilled cheese with veggies.  Say what?  That's not a grilled cheese anymore.  Its a panini, pressed sandwich, grilled sandwich.  Not a grilled cheese, sir!  :)  You can probably see where this recipe is going.  When I want grilled cheese, I just want a whole buncha melting gooey cheese in between buttery, crisp, chewy bread!

Ingredients (serves 1)
2 slices of your favorite bakery fresh bread (brioche, sweet Hawaiian bread, raisin bread, sourdough, etc...  I  used walnut bread in the pictures because that was all I had)
5-6 slices of your favorite cheese, room temperature (I use Tillamook medium cheddar and jalapeno jack)
4 teaspoons butter, softened to room temperature

Directions
1.  Layer cheese in between bread.

2.  Heat skillet on medium-high.  Spread half of butter on one outer bread slice of the sandwich.  When pan is warmed, place buttered side of sandwich down in the pan.

3.  Working carefully, spread remaining half of butter on top of the outher bread slice of sandwich facing upwards.

4.  Use a spatula to press down on the sandwich, so that it gets hot and the cheese gets nice and melty.  Turn heat down to medium.  Grill for 3 minutes or until a deep, golden brown.

5.  Flip sandwich and grill for another 2 minutes.  Do not let bread get too dark, which may happen if you use a sweeter bread.  If THIS HAPPENS AND YOUR CHEESE IS STILL SOLIDIFIED IN THE CENTER, do not fret!  I have a super simple solution.  Please don't judge.  Because it works and tastes like it was grilled in the pan from start to finish.  **microwave**  Yup.  Zap it for 5 to 10 seconds, uncovered, if it's a lot of cheese, 15 seconds.  Unfortunately I've had to do this before because I slice my own cheese from 3-lb blocks (i like cheese), and when I slice them myself, they may come out too thick, and sometimes (most of the time) I can't wait for the slices to reach room temperature before grilling.  The solution: microwave!

6.  LOOK HOW NICELY THIS GUY OOZED UP.  Enjoy the rich, melty, gooey goodness.
