{ spatchcock (butterflied) roast turkey recipe }


Promise, I'm not lying.  Want one recipe forever, foolproof every single time, with the juiciest turkey meat you've ever crossed paths with in your life?  Remove the turkey's backbone before roasting.  That's it.  So, it may not be the prettiest bird, but is well worth it.  Spatchcock (butterfly) the turkey and not only will you have the juicest turkey your teeth has ever sank into, but your cooking time is cut in half (hence, juicy legs!).  I mean, literally, there are no more than 4 ingredients necessary.  Turkey, olive oil, salt and pepper.  It's baked to golden, super-crispy perfection in about 1½ hours.  No one will believe the time.  The other secret to the juciest turkey is letting that guy rest about 2 to 3 hours (at least), covered, after he's out of the oven.  I made Dad, chef of his own restaurant, this exact turkey for his 60th birthday and he was speechless.  He's  actually known as the Turkey King around the holiday's - Dad's annual turkeys are dripping with juice, but to my surprise, he told me his birthday turkey was better.  I thought he was lying!  I don't know how else to tell you just how perfect this method is.  Try it on Thanksgiving.  You will NOT regret it.
