Roasted Pumpkin Seeds
Don't waste your Jack O' Lantern seeds.  They are a fun snack to have while carving out your pumpkin! 

Ingredients (yields 1 cup)
1 packed cup pumpkin seeds, straight out of the pumpkin, discarding any pulp
1/2 teaspoon kosher salt
1/2 teaspoon sugar
1/4 teaspooon cinnamon

Directions
1.  Preheat oven to 325 degrees F.

2.  Mix seeds with salt, sugar and cinnamon.

2.  Line baking sheet with aluminum foil (I use a darker pan, so seeds dry faster underneath)

3.  Spread seeds out evenly in pan in one layer (or as much as possible. they will stick as they are sticky and wet from coming right from the pumpkin).

4.  Bake for 28 minutes.  Remove pan from oven and using a wooden spoon or your fingers (be careful if you use your fingers - you have to be really quick and nimble.  I've cooked for so long that my fingers are immune to hot stuff).  Stir seeds and "unstick" as many seeds as you can stuck on the foil bottom.  At 28 minutes, it should be mostly dry and with just a flick, they should jump off...

5.  Bake for 4 to 5 more minutes.

6.  Let cool to warm or room temperature.  

Enjoy munchin' on your seeds while you carve the rest of your jack-o-lantern!
